These pancakes are a nice low-carb alternative to regular pancakes. After bringing back the incredible book The Real Meal Revolution from our trip to Cape Town in 2014, I’ve been trying to reduce carbs for the entire family, including the children. I tried many different low-carb pancakes, and it took me some time to find the right substitute for wheat flour and still create something that the kids would eat. These pancakes here are my children’s favorites so far. They like them with a mix of applesauce and mango sauce and fresh fruits.
In this smoothie I combined fresh pineapple with coconut water and shredded unsweetened coconut to create a fresh summer flavor. We drink smoothies almost every morning because it is a delicious opportunity to add your daily amount of vitamins, proteins, and omega 3 to your diet. Did you know, only 150 g (~ 1 cup) of fresh pineapple will provide over 100% of your recommended daily Vitamin C intake?
Love ice cream and healthy homemade desserts, sugar-free yet absolutely delicious? Then this recipe is for you, and you don’t even need an ice cream maker. At the moment I’m in love with Matcha (Green Tea). Its slightly herbal taste combined with something creamy and sweet is a great taste experience. One day I had Matcha ice cream prepared for dinner with friends, but I realized it wasn’t enough for everyone. Looking for additional ingredients to add, I picked bananas. It was a winner, nicely enhancing the Matcha flavor and adding a creamy texture. Our guests loved it, and now we always have some Matcha Banana Ice Cream in our freezer.
My kids are not big eaters in the early morning before school, but I always try to give them at least a little bite before they leave the house. A few months ago I had a conversation about healthy food with my oldest daughter Zoe (yes, she is already interested in cooking and asks a lot of questions about healthy food and junk food). That’s when we came up with the idea of starting the early mornings with nice smoothies, to also help the kids concentrate in school. When living in Cape Town we had a healthy little restaurant (Kauai) right next door and we often stopped by to get some delicious and freshly made smoothies. I couldn’t find anything similar in Luxembourg, so why not make our own smoothies at home to start the day?
