What is your favorite savory snack after dinner? We often enjoy some nuts with a nice glass of wine in the evenings, especially cashew nuts or pistachios. We usually stay away from chips or crackers because they are usually loaded with unhealthy fats and other ingredients. I know that some better options are available now, but how about making your own?! That way you can choose the spices and oils, and you can use a healthy method for making your homemade chips: using a dehydrator – no deep-frying or baking needed.
When it comes to soup, I’m facing an interesting challenge. In our family of five, everyone has different preferences. My older daughter likes only clear Asian broth with some veggies and protein, the middle one needs everything pureed, and the little boy absolutely loves soup, any kind, every day! I hope it will stay that way. Of course, this means every time I prepare soup, someone will skip it. Well, I guess that’s a challenge many of you are familiar with. 😉
Are you wondering why I named this soup “crunchy”? The soup itself is creamy and (optionally) slightly spicy due to the ginger and the red curry paste. I used a 30% fat reduced coconut cream and my Homemade Vegetable Broth to keep it light. The crunchy part is the dehydrated leek I add just before serving. This crunchy leek gives the soup an awesome kick.
With Chili Con Carne you can never go wrong. It’s great as a midnight dish if you’re having a big party e.g. for New Year’s eve, and it’s also one of my kid’s favorite foods. All three of them like it very much, which does not happen often these days. I cook it almost every other week because it’s a good source of nutrition for their weekday meals and very easy and quick to prepare. I love to add cumin and cinnamon because it creates a very nice flavor.
Savoy cabbage is not something that I’ve cooked much in the past, not because I don’t like it, mostly because it’s not been top of my mind. Since I’m trying to leave out carbs in our day-to-day food, I’ve been looking for ingredients to substitute in my meals for a healthier living. That’s when savoy cabbage came back to my mind, and I looked around for different ways of cooking it. I found interesting recipes that filled and rolled the cabbage, but often with rice or similar. The following recipe is my carb-free modification. I served it to my friends and they liked it very much. My husband also liked it, but in his opinion, a bit more of the spices could have been added. Feel free to add more of the spices or substituted them with different flavors. I think you can go very creative with this recipe.
