There are many ways to prepare cauliflower, but have you ever tried preparing a whole roasted cauliflower? This is a vegan side dish which is not only an amazing eye catcher, it’s also prepared with a lot of healthy ingredients. When it’s ready to serve, just slice it at the table like a cake.
You may have noticed that I’m a huge fan of hummus, and that’s why I always try to combine it with new ingredients. In this recipe, I added organic white beans with mediterranean spices to create a smooth and creamy vegan hummus. This is a delicious wrap filled with organic salmon, baby spinach, and avocado, combined with cream cheese, lemon, and cilantro. To add a bit extra flavor, I used my Buckwheat Curry Tortillas with their subtly nutty taste and a hint of curry. This wrap is great as a starter, light lunch or dinner, or to take along in your lunchbox.

Initially I came across buckwheat a bit by accident. I bought it thinking I was buying spelt flour, but then noticed the difference when preparing pancakes for the kids. After reading more about buckwheat, I learned more about its super food properties. Buckwheat is not a grain, it’s a seed of a plant, and the plant belongs to the same family as rhubarb and sorrel. It contains high quality proteins, better digestible carbohydrates, antioxidants, minerals, and vitamins. In other words, buckwheat is a healthier option for wheat or grains. If you eat healthy and listen to your body, you will recognize how your body feels after consuming certain kinds of food, even if you don’t outright suffer from any intolerances.

I’m using almond and coconut, rich in healthy fat, fiber, magnesium, and vitamin E, and organic honey as a sweetener. Did you know that honey has antibacterial properties? That’s why honey is often called a natural antibiotic. We’ve never been using a lot of refined sugar in our house, but after starting my blog about two years ago, I cut out refined sugar completely. It feels great to eat healthy desserts.
