The creamy vanilla taste of panna cotta combined with fruity citrus flavors of passion fruit and physalis coulis is a fantastic combination, especially if you prefer desserts that aren’t too sweet. After many attempts to create a perfectly creamy panna cotta using agar agar, I finally managed to get it right. Using agar agar instead of the commonly used gelatin makes this dessert perfect for every vegetarian. Agar agar is derived from algae, whereas gelatin is typically derived from animal products.
While visiting Barcelona recently, I enjoyed my very first Crema Catalana. It is the Spanish version of the French Crème Brulée. The original Crema Catalana is lighter than Crème Brulée and the lemon or orange zest adds a beautiful fruity flavor. In my recipe, I went a bit further and made the fruity part with mandarins and rooibos tea from South Africa, my second home. “Crème a la South Afrique” could have been another name for this 😉

At the moment I’m in love with Matcha (Green Tea). Its slightly herbal taste combined with something creamy and sweet is a great taste experience. One day I had Matcha ice cream prepared for dinner with friends, but I realized it wasn’t enough for everyone. Looking for additional ingredients to add, I picked bananas. It was a winner, nicely enhancing the Matcha flavor and adding a creamy texture. Our guests loved it, and now we always have some Matcha Banana Ice Cream in our freezer.
I’m totally in love with Matcha Green Tea. I could add it to any kind of meal I’m creating at the moment. The slightly bitter and well balanced herbal taste is very delicious and I will soon try to add it even in savory dishes. This time it was girl’s night again and I created a completely carb-free, sugar-free, vegan, and very healthy dessert recipe. Because chia seeds and coconut flakes are also part of it, we came up with the fun name of “Matchicoco”.

With hardly any exception, everyone pointed us to the delicious Key Lime Pie, made with fresh little limes from the Florida Keys. With this in mind, I started creating a version of a carb-free tropical Key Lime Cheesecake – and yes, without any sugar or carbs! I hope you find it as delicious as we did.
