This salad is a fresh and light summer dish that makes you feel fantastic inside-out on hot days. The combination of the spicy and sour dressing with the salty feta gives it a great twist. Luxembourg has been blessed with true summer weather recently, and we’ve been spending days outside and enjoying barbecues almost every day with lots of fresh veggies and fish or beef. This salad makes a great side dish to any barbecue as well.
This Chickpea Flatbread is a great alternative to Naan Bread if you like Indian cuisine. I like the flavor of chickpeas very much and in combination with cumin it’s a great side dish and much healthier and lower in carbs than regular flatbread. Feel free to give it a try with my Kashmiri Chicken Curry and Cauliflower Rice, or your favorite curry dish.
Chicken Curry is an all-time favorite in our house and full of Umami. Even the kids love to eat it. Recently I received some Kashmiri chili powder from a good friend in London, which is one of the most amazing mixtures I’ve tasted so far. The Kashmiri Chicken Curry turned out very nicely, a perfect flavor combination. You can serve it with rice, or for a carb-free alternative, with my Cauliflower Rice or Chickpea Flatbread (recipe to follow) as shown in the picture.
Rice is part of the daily meal for a large number of people around the world, not only in Asia, but also in Western countries. The problem is that rice is relatively high in carbs. In my attempt to remove more carbs from our diet, I found that cauliflower is a great carb-free vegetable substitute for many higher-carb sides. You can make flat-bread, puree, and even carb-free rice from cauliflower. Here I show how to make rice out of cauliflower, which you can serve with any of your favorite dishes that would normally go with rice.
Substituting bread can be one of the biggest challenges when going carb-free, especially for those who love savory food for breakfast. If you are from Germany, like I am, you are most likely used to eating bread or rolls (“Brötchen”) almost daily for breakfast, and often as well for dinner (“Brotzeit”). I’ve been thinking about how to create a delicious carb-free bread, and a few days ago, I finally gave it a try. Based on my Nutty Crackers, I added some moisture ingredients and carb-free flours, and out came a delicious healthy bread. My husband tried it this morning and he is as impressed as I am. This bread will help us a lot with our carb-free nutrition.
