Since we adjusted our diet to eat fewer carbs, I started using cauliflower more regularly in different ways, especially as a side dish. This cauliflower puree is a delicious side alongside any kind of fish or meat, for example, with Filled Meatballs in Tomato Gravy or Fillet of Beef on Mushroom Sauce. It’s a delicious and healthy carb-free alternative to mashed potato because the texture is similar and the taste is even more refined with the fine milky and almost nutty flavors of the cauliflower. Cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6, so not only delicious, but also very healthy!
In the mornings we often enjoy smoothies because they are a quick and healthy start to the day. Here I combined Asian flavors of Matcha (Green Tea) and coconut to create a nice creamy and slightly herbal taste experience. This Matcha-Coconut-Almond Smoothie was inspired by the popular Matcha Latte, though I wanted to create something richer and creamier that includes the very healthy and uniquely tasting Matcha. I could drink this daily, it’s so delicious!
During our recent trip to Florida, we have been asking people about the most well known Florida recipe. With hardly any exception, everyone pointed us to the delicious Key Lime Pie, made with fresh little limes from the Florida Keys. With this in mind, I started creating a version of a carb-free tropical Key Lime Cheesecake – and yes, without any sugar or carbs! I hope you find it as delicious as we did.
We’re currently traveling through sunny Florida, and I’m inspired by some of the local flavors and produce. Fresh avocados and mangos grow right here in people’s backyards, and there is a good selection of fresh fish and seafood. This dish is my interpretation of a tropical Florida inspired dish with fresh fish, mango, avocados, key lime juice, and chilies.
This recipe is inspired by a very good friend of mine who came to our house one day with the most awesome vegan dark chocolate mousse. The fluffy texture was outstanding. Based on her recipe, I tried to create a white chocolate mousse. It took me a few tries until I got it right, but the following recipe is the perfect outcome. It’s quick, easy, and very delicious!
