We just returned home after a few days in Dubai where we enjoyed the food and the various international flavors. We ate at one of our favorite Thai restaurants several times, and it was so delicious! Inspired by this experience, and thinking about what to cook for dinner tonight, I decided to go for Thai. I wanted to combine the crunchy texture of the Laab Gai Salad (minced chicken salad) and the spicy creamy flavor of the Thai Red Curry. To keep it light and healthy, I served it on Chinese cabbage, which you can fold into a wrap. You can serve this dish as a starter (8 servings) or a main dish (4 servings).
My family and I love to eat meat, especially a nice fillet of beef or côte à l’os on the barbecue in the summer. Lately, I read a lot about cooking meat to perfection by vacuuming it and then cooking it on very low temperature for longer times, which inspired me to buy a Sous-Vide cooker and a vacuum sealer. After experimenting with veal and beef, I can confirm that the results are overwhelming. The meat is completely pink inside, very soft, so soft that it almost melts in your mouth – it’s simply delicious!
I love the taste of sweet potato, especially the darker-skinned variety with the thick and dark orange colored pulp. It has a hint of sweet with a moist texture. Sweet potato is low in carbohydrates, has a high nutrient density, and is source of certain vitamins and minerals such as Vitamin A and Beta-carotene. As a result, sweet potato is a great alternative for a healthy side dish.
My kids are not big eaters in the early morning before school, but I always try to give them at least a little bite before they leave the house. A few months ago I had a conversation about healthy food with my oldest daughter Zoe (yes, she is already interested in cooking and asks a lot of questions about healthy food and junk food). That’s when we came up with the idea of starting the early mornings with nice smoothies, to also help the kids concentrate in school. When living in Cape Town we had a healthy little restaurant (Kauai) right next door and we often stopped by to get some delicious and freshly made smoothies. I couldn’t find anything similar in Luxembourg, so why not make our own smoothies at home to start the day?
Nearly every child likes Spaghetti Bolognese or Lasagne, and so do mine and nearly all their friends. It’s always a winner as a kids meal when we have guests for dinner. And not only kids like the Bolognese Sauce, a delicious home made pasta dish with this sauce is also a nice weekday meal for my husband and myself.
