You may have noticed that I’m a huge fan of hummus, and that’s why I always try to combine it with new ingredients. In this recipe, I added organic white beans with mediterranean spices to create a smooth and creamy vegan hummus. Did you know that white beans offer a generous quantity of magnesium, which can help your body handle stress better. They are also packed with slow digesting carbohydrates and have a low glycemic index, which is good for your blood sugar level.
I love the flavors of Middle Eastern food, especially from Lebanon, Turkey, and Morocco. To make this hummus, I added Zatar and a little chilli, which goes very well with the earthy flavour of the beetroots. Zatar is an herb that grows in the Middle East and tastes similar to thyme and oregano. In the Lebanese cuisine, it’s being used with sesame seeds and olive oil to create spreads for flat breads. Beetroots, especially when raw, are a very good source of vitamins and minerals. They are packed with antioxidants to keep our immune system healthy. A real super food!
In this recipe I combined the fruity, citrusy, and herbal taste of the salad with the fresh spicy flavor of the prawns. This creates a mouthwatering flavor of “Summer Time” which you can enjoy when sitting outside and when friends are over. A couple of days ago we got a good taste of summer, which inspired me to create this recipe. Hopefully summer will be back soon after too many cold and rainy weeks in Luxembourg recently. Serving this appetizer in spoons or on small plates or glasses makes this a casual, light, and enjoyable experience.
Substituting bread can be one of the biggest challenges when going carb-free, especially for those who love savory food for breakfast. If you are from Germany, like I am, you are most likely used to eating bread or rolls (“Brötchen”) almost daily for breakfast, and often as well for dinner (“Brotzeit”). I’ve been thinking about how to create a delicious carb-free bread, and a few days ago, I finally gave it a try. Based on my Nutty Crackers, I added some moisture ingredients and carb-free flours, and out came a delicious healthy bread. My husband tried it this morning and he is as impressed as I am. This bread will help us a lot with our carb-free nutrition.
Inspired by the South African cook book The Real Meal Revolution, these crackers are a perfect carb-free alternative to wheat crackers as snacks or alongside an appetizer. You can enjoy them with any kind of dip or crème. I love to serve those crackers with tuna crème and some olives, which is always very well received by our guests. Combined with Champagne, it makes for a delightful welcome and starter.
