On my first visit to Istanbul recently, I saw so many different and delicious ways eggplant can be prepared, it was amazing and inspiring. In this dish I combined some of the flavors of Turkey to create a quick, easy, and vegetarian dish you can enjoy by itself or with grilled lamb or meat. My husband is a big fan of eggplant, and I have to admit, I’m turning into almost as big of a fan as he is.
Caprese Salad is one of my favorite Italian starters. In this recipe I replaced the mozzarella cheese with burrata and instead of olive oil I created an herbed oil dressing. Burrata is made from mozzarella and cream, the outer shell is made from mozzarella and the inside contains both mozzarella and cream. The cheese has a rich, buttery flavor and retains its fresh milkiness. Overall, this is a nice combination of the creamy burrata, the strong flavor of the herbs, and the fresh, firm flesh of the tomato. This dish is especially nice during warm summer days, but in my opinion, you can enjoy it all year around.
Chicken Curry is an all-time favorite in our house and full of Umami. Even the kids love to eat it. Recently I received some Kashmiri chili powder from a good friend in London, which is one of the most amazing mixtures I’ve tasted so far. The Kashmiri Chicken Curry turned out very nicely, a perfect flavor combination. You can serve it with rice, or for a carb-free alternative, with my Cauliflower Rice or Chickpea Flatbread (recipe to follow) as shown in the picture.
Savoy cabbage is not something that I’ve cooked much in the past, not because I don’t like it, mostly because it’s not been top of my mind. Since I’m trying to leave out carbs in our day-to-day food, I’ve been looking for ingredients to substitute in my meals for a healthier living. That’s when savoy cabbage came back to my mind, and I looked around for different ways of cooking it. I found interesting recipes that filled and rolled the cabbage, but often with rice or similar. The following recipe is my carb-free modification. I served it to my friends and they liked it very much. My husband also liked it, but in his opinion, a bit more of the spices could have been added. Feel free to add more of the spices or substituted them with different flavors. I think you can go very creative with this recipe.
Nearly every child likes Spaghetti Bolognese or Lasagne, and so do mine and nearly all their friends. It’s always a winner as a kids meal when we have guests for dinner. And not only kids like the Bolognese Sauce, a delicious home made pasta dish with this sauce is also a nice weekday meal for my husband and myself.
